Minimalist Mediterranean where the windows and a mirrored wall open up the small space.

Jeff Taylor and crew have put a decidedly Mediterranean spin on the original Spanish concept of wine-bar snacking, offering dishes like pesto trio of mission fig, roasted pine nut and basil and piquillo pepper and grape leaf; country style pork plate with toasted pistachios and a side of organic crostini; and a spread of four seafood plates spiced up with a tour around the Mediterrean sea. These tapas are the tops.

Acqua Viqa serves up a macaroni and cheese that's positively dizzying. Artisan macaroni and sharp white cheddar cheese — roasted tomatoes and white truffle oil — are mixed in just the right proportions so that the noodles are all melty and soft but not too wet or dry; a large bowl of this goodness is evenly covered with truffle oil and tossed with diced tomatoes and fresh basil.

Entrees include herb rubbed roasted chicken, seafood stew, vegetable lasagna, yellow fin tuna loin and baked penne with lamb ragu. Check the menu link for updates.

Wine list includes 45 varieties of white, red and rose wines from the Mediterranean. Organic wines are identified by a small heart next to the selection.

My friend and I went to Acqua Via for lunch, b/c she was craving their amazing artichoke soup. Had a nice lunch, then went to the counter to pay. As the server was ringing us up, a large group of 6 adults and 3 kids (between about 7-10 yrs. old, very well-behaved) came in and headed toward a large table. The server said, "oh no, excuse me, I need to go stop them from sitting down." My friend and I looked at each other bewilderedly, and when the woman returned she said, "I know, I hate to do that, but it's fire code, we can't be over capacity." When we still looked skeptical (because there were plenty of open seats), she said - in a hushed, conspiratorial tone - "Actually, a lot of our clientele like a certain atmosphere, so we kind of have an unspoken 2-kid limit." So yeah, she kicked out a group of paying customers and their totally silent children, apparently because their "certain clientele" would prefer not to deal with such riff raff. This "policy" is not posted anywhere, by the way.

This ridiculous elitism is disgusting, and incredibly misplaced. This is not haute cuisine. This is a soup and sandwich place, in downtown freaking Olympia.

Anyway, we work in a large state agency downtown, and my friend and I are telling all of our colleagues, and have alerted our collective 1200 facebook friends. If you want "atmosphere", Acqua Via, wait and see how quiet it is without all of us.
